Go grab those pumpkins ladies because this recipe is AMAZING!! And simple, so you can add something else to your list of WHAT YOUR TOTALLY AWESOME AT and believe even more in your own culinary skills! And as this is a mixture of cold and warm, you could pull this out at any party all year round. From a summer BBQ to a cosy winter night in with a nice glass of red wine and your man massaging your feet, this dish really does impress the pants off you (and your mum!).
- 1kg of pumpkin or butternut squash, peeled and cut into moon shapes (or even get creative on your shapes!!)
- 2 red onions, sliced
- 4 garlic cloves, crushed
- Dried oregano
- Dried chili flakes
- Splash of olive oil (splash it just like Jamie Oliver!)
- 1 Fennel, sliced thinly
- juice of 1 lime
- 1 tsp of freshly grated ginger
- 3 tbs olive oil
- small handful of chopped mint leaves
- watercress salad
- crumbed feta cheese
1/ Preheat the oven to 200 deg C. Place the pumpkin or squash on a roasting tray with the garlic. Season with salt, oregano, chilli and drizzle over the olive oil. Roast for 50 minutes until golden.
2/ For the salad, mix together the watercress, sliced fennel and sliced onion in a bowl.
3/ For the dressing, mix together 3 tbs of olive oil, 1 tsp of grated ginger, juice of 1 lime and half of the small handful of mint. Drizzle half of this mixture into the salad and mix well. Divide the salad among the plates
4/ Once the squash is ready, add this to the plates of salad, then drizzle over the rest of the dressing, the left over mint and garnish with feta cheese.
